I’m officially off my veggie rocker. Or really it’s cauliflower. I am cauliflower obsessed! I’m obsessed with finding creative and inventive ways to use cauliflower and I cannot be stopped. First it was Spanish Cauliflower Rice. Then as a Parmesan. THEN as Beer-Battered Tacos. Now as Cream of Wheat?! A Cauliflower FauxMeal: this is complete insanity. No, wait, don’t go anywhere! You might not be a believer yet but stick with me, okay?
Why cauliflower and why a Cauliflower FauxMeal? It’s the perfect option for those little ones who cannot eat grains or nuts. Completely free from both, this hot cereal gets its great texture from a banana and unsweetened applesauce; and it’s great flavor from a dash of cinnamon and nutmeg. Process it through a blender and you immediately have a creamy, fruit and veggie-packed breakfast, similar to Cream of Wheat. You won’t even KNOW there’s cauliflower in it!
This completely grain and nut free hot cereal is filled with unsuspecting fruits and veggies! Sneak some extra nutrition into your kids’ breakfast with this Cauliflower FauxMeal:

Ingredients
- 2 c. cauliflower rice
- 1 1/2 c. dairy free milk
- 2 small bananas, just ripe
- 6 Tbsp. unsweetened applesauce
- 2 Tbsp. brown sugar
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
Instructions
- Throw everything into a high-speed blender until some-what smooth. If you need to add more milk, do so by the tablespoon until right consistency.
- Place into a small saucepan and heat up for approx 5 minutes.
- Top with fresh fruit and chopped pumpkin seeds (optional).

Cara, you mention that you are all about the cauliflower. So I wanted to pass this on to you, on Home and Family, they had a guest who made pizza crust from just pureed cauliflower, no flour at all. They did use eggs and a little cheese, but after following you and your recipe creations, I have no fear that you could do this pizza crust vegan style and blow theirs out of the water. I saw this lens on good veg and followed it here. I just made this and it is yummy. I substituted stevia for brown sugar, added 1 tbs cocoa powder, 1 tbs peanut flour (pb2), and 1 tsp maple extract. It is pretty good! i cannot taste the cauliflower at all. oh, I also stirred in some chia seed.

You can’t! It also depends on how ripe of a banana you use so if you had the taste of bananas, use a less ripe one.
